Breakfast Poutine
  • 4 russet potatoes cut into fries or cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheese curds
  • 6 eggs large
  • 0.5 lb breakfast sausage cooked and crumbled
  • 2 tbsp chives chopped
  • 1 tbsp parsley chopped
Hollandaise Sauce
  • 3 egg yolks
  • 1 tbsp lemon juice
  • 0.5 cup unsalted butter melted
  • 1 pinch cayenne pepper
  • salt to taste

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  3. Spread potatoes on baking sheet and roast 35-40 minutes until crispy and golden.
  4. Cook breakfast sausage in a skillet until browned and fully cooked.
  5. Whisk egg yolks and lemon juice together in a heatproof bowl.
  6. Place bowl over simmering water and slowly whisk in melted butter until thick and creamy.
  7. Season hollandaise sauce with cayenne pepper and salt.
  8. Cook eggs to your preferred style such as fried or poached.
  9. Arrange crispy potatoes on a serving platter and top with cheese curds and sausage.
  10. Add eggs, drizzle with hollandaise sauce, garnish with herbs, and serve immediately.

Notes

For extra flavor, add crispy bacon, sautéed mushrooms, or jalapeños. Serve immediately while the potatoes are hot and crispy.
