Ingredients
  

Chicken and Sauce
  • 2 boneless skinless chicken breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 0.75 cup Marsala wine
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 tsp dried thyme
Creamy Orzo
  • 1 cup orzo pasta
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp butter
  • 0.25 cup parsley chopped

Method
 

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet and sear chicken until golden on both sides.
  3. Remove chicken from skillet and set aside.
  4. Melt butter in the same skillet and sauté mushrooms until browned.
  5. Add minced garlic and cook until fragrant.
  6. Pour in Marsala wine and scrape the bottom of the skillet.
  7. Add chicken broth and thyme and simmer for 5 minutes.
  8. Stir in heavy cream and return chicken to the skillet.
  9. Add orzo pasta and simmer covered until pasta is tender.
  10. Stir in Parmesan cheese, butter, and parsley before serving.

Notes

For extra richness add additional Parmesan cheese or finish with a splash of lemon juice for brightness.
