Ingredients
  

Pork Meatballs
  • 1 lb ground pork
  • 0.5 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
Sweet Potato Mash
  • 3 sweet potatoes peeled and cubed
  • 3 tbsp butter
  • 0.25 cup milk
Bourbon Maple Sauce
  • 0.5 cup maple syrup
  • 0.25 cup bourbon

Method
 

  1. Boil sweet potatoes until tender and mash with butter, milk, salt, and pepper.
  2. Mix pork, breadcrumbs, egg, garlic, and seasonings.
  3. Shape mixture into meatballs.
  4. Brown meatballs in a skillet until cooked through.
  5. Simmer maple syrup, bourbon, butter, and mustard to create sauce.
  6. Add meatballs to sauce and coat evenly.
  7. Serve meatballs over sweet potato mash with extra sauce drizzled on top.

Notes

For deeper flavor allow the bourbon maple sauce to simmer until slightly thickened before adding meatballs.
