Method
- Preheat oven to 325°F (165°C).
- Season brisket with salt and pepper.
- Sear brisket in hot oil until browned on both sides.
- Remove brisket and sauté vegetables until softened.
- Add garlic and tomato paste; cook briefly.
- Deglaze with red wine and simmer.
- Add broth, herbs, and return brisket to pot.
- Cover and braise in oven for 4 hours.
- Slice against the grain and serve with sauce.

Brisket improves in flavor when made a day ahead.
