Ingredients
  

Brisket
  • 4 lb beef brisket
  • 2 tsp salt
  • 1.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 onions sliced
  • 3 carrots chopped
  • 2 stalks celery chopped
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 3 cups dry red wine
  • 2 cups beef broth
  • 4 sprigs fresh thyme
  • 2 bay leaves

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Season brisket with salt and pepper.
  3. Sear brisket in hot oil until browned on both sides.
  4. Remove brisket and sauté vegetables until softened.
  5. Add garlic and tomato paste; cook briefly.
  6. Deglaze with red wine and simmer.
  7. Add broth, herbs, and return brisket to pot.
  8. Cover and braise in oven for 4 hours.
  9. Slice against the grain and serve with sauce.

Notes

Brisket improves in flavor when made a day ahead.
