Ingredients
  

Sauce
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp chili flakes optional
  • 14 oz crushed tomatoes
Assembly
  • 4 eggs large
  • 4 slices rustic bread toasted
  • 0.25 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in skillet and sauté onion until soft.
  2. Add bell pepper and garlic, cook until fragrant.
  3. Stir in spices and crushed tomatoes. Simmer 8-10 minutes.
  4. Create wells and crack eggs into sauce. Cover and cook until whites set.
  5. Toast bread slices until crisp.
  6. Spoon sauce and eggs over toast. Garnish with feta and parsley.

Notes

Add avocado slices or drizzle chili oil for extra flavor. Best served immediately while eggs are runny.
