Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss halved potatoes, bell pepper, and zucchini with olive oil, garlic, thyme, paprika, salt, and pepper. Spread evenly on sheet pan.
- Bake vegetables for 15 minutes, stirring halfway through.
- Place salmon fillets in center of pan, season with salt, pepper, and olive oil.
- Bake additional 12–15 minutes until salmon flakes easily and vegetables are roasted.
- Garnish with lemon slices and chopped parsley before serving.
Notes
Optional: add cherry tomatoes or asparagus for variety.
