Shepherd’s Pie Baked Potato

A hearty baked potato filled with savory shepherd’s pie ingredients, mashed potato topping, and optional cheese.

Ingredients
  

  • 4 large baking potatoes
  • 1 lb ground beef, lamb, or turkey
  • 1 onion diced
  • 2 carrots diced
  • 1 cup peas
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • to taste salt and pepper
  • 1 tbsp olive oil or butter
Mashed Potato Topping
  • 2 cups mashed potatoes prepared with butter and milk
  • optional cup shredded cheese for topping

Equipment

  • Skillet
  • Mixing bowls
  • Potato masher

Method
 

  1. Preheat oven to 400°F (200°C) and scrub potatoes.
  2. Bake potatoes for 45–60 minutes until tender.
  3. Sauté onions, carrots, and garlic in olive oil until soft.
  4. Add ground meat and cook until browned.
  5. Stir in tomato paste, Worcestershire sauce, peas, salt, and pepper; simmer 5–10 minutes.
  6. Prepare mashed potatoes with butter, milk, salt, and pepper.
  7. Slice baked potatoes, scoop out some flesh if desired.
  8. Fill potato shells with shepherd’s pie mixture.
  9. Top with mashed potato and optional cheese.
  10. Bake 10–15 minutes until golden and serve warm.

Notes

For a vegetarian version, substitute meat with lentils or mushrooms.
