Method
- Preheat oven to 325°F (165°C).
- Season beef roast with salt and pepper.
- Sear beef in hot oil until browned on all sides.
- Add onion and garlic, cooking until softened.
- Add cranberries, broth, balsamic vinegar, and sugar.
- Return beef to pot, add rosemary, cover, and braise 3½–4 hours.
- Reduce sauce to glaze consistency and serve over sliced beef.
Notes
Glaze thickens further as it cools.
