Ingredients
  

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 onion sliced
  • 4 cloves garlic minced
  • 1 cup cranberries fresh or frozen
  • 0.75 cup beef broth
  • 0.5 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 2 sprigs fresh rosemary

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Season beef roast with salt and pepper.
  3. Sear beef in hot oil until browned on all sides.
  4. Add onion and garlic, cooking until softened.
  5. Add cranberries, broth, balsamic vinegar, and sugar.
  6. Return beef to pot, add rosemary, cover, and braise 3½–4 hours.
  7. Reduce sauce to glaze consistency and serve over sliced beef.

Notes

Glaze thickens further as it cools.
