- Heat olive oil in a large skillet over medium heat.
- Cook diced potatoes until golden and slightly tender. Remove and set aside.
- Brown ground beef in the same skillet, breaking apart as it cooks.
- Add onion and cook until softened, then stir in garlic.
- Return potatoes to skillet and add all seasonings.
- Pour in beef broth, cover, and cook until potatoes are fork-tender.
- Uncover and cook briefly to reduce moisture, then garnish and serve.
Notes
For extra smoky flavor, add a splash of Worcestershire sauce or a pinch of cumin.
