  • 1 lb ground beef
  • 4 Yukon Gold potatoes diced
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 0.5 tsp dried thyme
  • 0.5 tsp chili powder optional
  • 0.25 cup beef broth

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook diced potatoes until golden and slightly tender. Remove and set aside.
  3. Brown ground beef in the same skillet, breaking apart as it cooks.
  4. Add onion and cook until softened, then stir in garlic.
  5. Return potatoes to skillet and add all seasonings.
  6. Pour in beef broth, cover, and cook until potatoes are fork-tender.
  7. Uncover and cook briefly to reduce moisture, then garnish and serve.

Notes

For extra smoky flavor, add a splash of Worcestershire sauce or a pinch of cumin.
