Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 egg large
  • 1 tsp almond extract
  • 0.5 tsp vanilla extract
  • 0.75 cup dried cherries chopped
  • 0.5 cup sliced almonds

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream butter and sugars until light and fluffy. Add egg, almond extract, and vanilla.
  4. Gradually mix in dry ingredients until just combined.
  5. Fold in dried cherries and sliced almonds.
  6. Scoop dough onto baking sheets and bake for 11–13 minutes.
  7. Cool briefly before transferring to a wire rack.

Notes

Do not overbake to maintain a soft center.
