Ingredients
  

  • 3 cups all-purpose flour
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 0.5 cup molasses
  • 1 tsp vanilla extract
  • 2 tsp ground ginger
  • 1.5 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 1 tsp baking soda
  • 0.5 tsp salt

Method
 

  1. Whisk dry ingredients together in a bowl.
  2. Cream butter and sugar until fluffy.
  3. Add egg, molasses, and vanilla; mix well.
  4. Gradually mix in dry ingredients.
  5. Chill dough for one hour.
  6. Roll dough in sugar and bake until soft.

Notes

Do not overbake. Cookies should look slightly underdone in the center for maximum softness.
