Ingredients
  

Shrimp
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
Rice Base
  • 3 cups cooked rice preferably day-old
  • 2 tbsp soy sauce
  • 1 tbsp butter
  • 1 tbsp vegetable oil
Vegetables & Aromatics
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
Egg & Seasoning
  • 2 eggs, beaten
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili flakes optional
Garnish
  • 2 green onions chopped
  • lemon wedges

Equipment

  • Large skillet or wok
  • Spatula
  • Knife
  • Cutting board

Method
 

  1. Season shrimp with Cajun seasoning and salt.
  2. Cook shrimp in oil until pink, then set aside.
  3. Sauté garlic, onion, and bell pepper in butter.
  4. Scramble eggs in the pan.
  5. Add rice and break up clumps.
  6. Stir in soy sauce, paprika, and chili flakes.
  7. Return shrimp and mix everything together.
  8. Garnish with green onions and lemon juice before serving.

Notes

Best made with day-old rice for ideal texture.
