Ingredients
  

Pasta
  • 12 oz elbow macaroni
Cajun Shrimp
  • 1 lb shrimp peeled and deveined
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
Cheese Sauce
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese

Method
 

  1. Cook macaroni until al dente and drain.
  2. Season shrimp with Cajun spices.
  3. Cook shrimp in skillet until pink and tender.
  4. Prepare roux with butter and flour.
  5. Whisk milk and cream into the sauce.
  6. Melt cheeses into the sauce until smooth.
  7. Combine pasta and cheese sauce.
  8. Fold shrimp into mac and cheese before serving.

Use freshly shredded cheese for the smoothest sauce and avoid overcooking the shrimp.
