Waffle Batter

  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 tsp sugar optional
  • 1 cup buttermilk
  • 2 eggs large
  • 0.25 cup unsalted butter melted
  • 1 cup cheddar cheese shredded
  • 2 jalapeños finely diced, seeds removed

Method
 

  1. Preheat waffle iron according to manufacturer instructions.

  4. Combine wet and dry ingredients until just mixed.
  5. Fold in shredded cheddar cheese and diced jalapeños.

Notes

For extra heat, leave some jalapeño seeds or add a pinch of cayenne pepper.
