  • 2 slices bread or muffin/bagel
  • 2 slices cheese
  • 2 tbsp mayonnaise
  • 1 tsp chipotle sauce
  • 1 tbsp butter
  • salt to taste
  • pepper to taste

Method
 

  1. Mix mayonnaise with chipotle sauce.
  2. Cook eggs in buttered pan to desired doneness.
  3. Toast bread until golden.
  4. Melt cheese on eggs.
  5. Spread chipotle mayo on bread.
  6. Assemble sandwich and serve.

Notes

Add bacon, sausage, or avocado for extra flavor. Adjust chipotle for spice level.
