  • 4 eggs large
  • 2 sandwich buns or English muffins
  • 2 slices cheddar cheese
  • 2 tbsp mayonnaise
  • 1 tbsp chipotle sauce
  • 1 tbsp butter
  • salt to taste
  • black pepper to taste
  • 0.5 avocado optional
  • 2 slices bacon optional

Method
 

  1. Mix mayonnaise and chipotle sauce in a bowl until smooth.
  2. Heat butter in a skillet over medium heat.
  3. Cook eggs to desired doneness and season with salt and pepper.
  4. Place cheese on eggs and allow it to melt.
  5. Toast buns or muffins until golden brown.
  6. Spread chipotle mayo on both halves of the bread.
  7. Layer eggs, bacon, and avocado on the bottom half.
  8. Top with remaining bread and serve warm.

Notes

Adjust spice level by adding more or less chipotle. Add lime juice for extra zing.
