Ingredients
  

Chipotle Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo sauce minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 1 tbsp lime juice
Burrito Bowls
  • 3 cups cooked white rice
  • 1 tbsp lime juice
  • 2 tbsp cilantro chopped
  • 1 cup black beans drained
  • 1 cup corn kernels
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion diced
  • lime wedges for serving
  • cilantro for garnish

Method
 

  1. Combine olive oil chipotle peppers paprika garlic powder cumin salt and lime juice in a bowl.
  2. Toss shrimp in the marinade and let sit for 15 minutes.
  3. Mix cooked rice with lime juice and chopped cilantro.
  4. Cook shrimp in a hot skillet until pink and lightly charred.
  5. Warm black beans and corn.
  6. Divide cilantro lime rice among bowls.
  7. Arrange beans corn avocado tomatoes and onion around the rice.
  8. Top bowls with spicy chipotle shrimp.
  9. Garnish with cilantro and lime wedges before serving.

Notes

For extra flavor grill the shrimp instead of skillet cooking. Store toppings separately for meal prep freshness.
