Ingredients
  

Shrimp & Rice
  • 1 lb shrimp (peeled and deveined)
  • 3 cups cooked rice (day-old)
  • 2 tbsp vegetable oil
  • 2 eggs
  • 3 cloves garlic (minced)
  • 0.5 cup green onions
Firecracker Sauce
  • 0.25 cup soy sauce
  • 2 tbsp sweet chili sauce
  • 2 tbsp sriracha adjust spice
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 tsp sesame oil

Equipment

  • Wok or large skillet
  • Spatula
  • Mixing bowl

Method
 

  1. Mix all sauce ingredients in a bowl.
  2. Cook shrimp until pink and slightly caramelized.
  3. Scramble eggs in the pan and set aside.
  4. Sauté garlic and fry rice until slightly crispy.
  5. Add shrimp, eggs, and sauce to rice and mix well.
  6. Finish with green onions and serve hot.

Notes

Day-old rice gives the best texture and prevents sogginess.
