Garlic Lime Shrimp
  • 1.5 lbs large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 2 limes juiced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
Cilantro Lime Rice
  • 2 cups white rice cooked
  • 2 tbsp cilantro chopped
  • 1 lime juiced
  • 1 tbsp butter
Bowl Toppings
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 avocado sliced
  • 1 cup pico de gallo
  • 0.5 cup shredded lettuce
  • 0.25 cup jalapeƱos sliced

Equipment

Method
 

  1. Marinate shrimp with oil, garlic, lime juice, and spices.
  2. Cook shrimp in a hot skillet until pink and slightly charred.
  3. Mix cooked rice with lime juice, butter, and cilantro.
  4. Assemble bowls with rice, shrimp, beans, corn, avocado, and toppings.
  5. Garnish with cilantro and lime wedges before serving.

Notes

Fresh lime juice and properly cooked shrimp create the best flavor and texture.
