Ingredients
  

Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.25 cup sugar
  • 2 eggs large
  • 1 cup buttermilk
  • 0.5 cup butter melted
  • 2 jalapeños diced
  • 0.75 cup cheddar cheese shredded

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking pan.
  2. Whisk dry ingredients together in a large bowl.
  3. Mix eggs, buttermilk, and melted butter in a separate bowl.
  4. Combine wet and dry ingredients gently.
  5. Fold in jalapeños and cheese.
  6. Bake 22–25 minutes until golden and set.

Notes

Remove jalapeño seeds for milder heat.
