Ingredients
  

Chicken Pineapple Bowl
  • 1.5 pounds chicken breast cubed
  • 2 tbsp olive oil
  • 1 cup pineapple chunks
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 1/3 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tbsp cornstarch slurry
  • 3 cups jasmine rice cooked
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Equipment

  • Large skillet
  • Mixing bowl
  • Saucepan
  • Wooden spoon

Method
 

  1. Season chicken with salt and pepper.
  2. Cook chicken in olive oil until golden and fully cooked.
  3. Add garlic and ginger and sauté briefly.
  4. Add soy sauce, honey, vinegar, and sriracha to make sauce.
  5. Thicken sauce with cornstarch slurry.
  6. Return chicken to skillet and coat in sauce.
  7. Add pineapple chunks and cook until caramelized.
  8. Serve over rice and garnish with green onions and sesame seeds.

Notes

Add vegetables like bell peppers or broccoli for extra nutrition. Adjust spice level with more or less sriracha.
