Ingredients
  

Noodle Bowls
  • 8 oz rice noodles
  • 2 chicken breasts sliced
  • 1 tbsp olive oil
  • 1 cup shredded carrots
  • 1 cup red cabbage shredded
  • 0.5 cup green onions sliced
  • 0.25 cup cilantro chopped
  • 0.25 cup peanuts crushed
  • 1 lime cut into wedges
Peanut Sauce
  • 0.5 cup creamy peanut butter
  • 0.25 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp sriracha
  • 0.25 cup warm water

Method
 

  1. Cook rice noodles according to package directions and drain.
  2. Whisk peanut butter, soy sauce, honey, lime juice, sesame oil, garlic, sriracha, and water until smooth.
  3. Cook chicken in olive oil until browned and fully cooked.
  4. Add carrots and cabbage, cooking briefly until slightly softened.
  5. Add noodles and peanut sauce to the skillet.
  6. Toss everything together until evenly coated and warmed through.
  7. Top with green onions, cilantro, peanuts, and lime wedges before serving.

Notes

Add extra warm water if the peanut sauce thickens too much. Adjust sriracha for desired spice level.
