Ingredients
  

  • 8 eggs large
  • 1 cup fresh spinach chopped
  • 0.5 cup feta cheese crumbled
  • 0.25 cup milk
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder

Method
 

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Lightly sauté spinach in olive oil until wilted.
  3. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Stir in spinach and feta cheese.
  5. Divide mixture evenly into muffin cups.
  6. Bake for 18–20 minutes until eggs are set.

Notes

Let cool slightly before removing from pan. Store refrigerated up to 4 days.
