- Preheat oven to 350°F (175°C) and line baking pan with parchment paper.
- Mix melted butter and brown sugar until smooth.
- Add eggs and vanilla, whisk until combined.
- Stir in flour, baking powder, and salt.
- Fold in crushed pretzels and spread into pan.
- Beat cream cheese, sugar, egg, and vanilla until creamy and spread over base.
- Mix strawberries, sugar, lemon juice and swirl over cheesecake layer.
- Bake 35–40 minutes until set. Cool completely.
- Whip cream with powdered sugar and vanilla, then top bars before serving.
