Blondie Base
  • 1 cup unsalted butter melted
  • 1.5 cups brown sugar packed
  • 2 eggs large
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup crushed pretzels
Cheesecake Layer
  • 8 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Strawberry Swirl
  • 1 cup fresh strawberries blended
  • 2 tbsp sugar
  • 1 tsp lemon juice
Cream Swirl
  • 0.5 cup heavy cream
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking pan with parchment paper.
  2. Mix melted butter and brown sugar until smooth.
  3. Add eggs and vanilla, whisk until combined.
  4. Stir in flour, baking powder, and salt.
  5. Fold in crushed pretzels and spread into pan.
  6. Beat cream cheese, sugar, egg, and vanilla until creamy and spread over base.
  7. Mix strawberries, sugar, lemon juice and swirl over cheesecake layer.
  8. Bake 35–40 minutes until set. Cool completely.
  9. Whip cream with powdered sugar and vanilla, then top bars before serving.

Notes

Chill before slicing for clean edges and best texture.
