Ingredients
  

Pretzel Base
  • 2 cups crushed pretzels
  • 0.5 cup unsalted butter melted
  • 0.25 cup sugar
Cheesecake Layer
  • 2 cups heavy cream
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
Strawberry Layer
  • 2 cups strawberries diced
  • 0.33 cup sugar
  • 1 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Mix crushed pretzels with butter and sugar, press into dish, and freeze.
  2. Cook strawberries with sugar and thicken with cornstarch slurry.
  3. Beat cream cheese, sugar, vanilla, and lemon juice.
  4. Whip cream and fold into cheesecake mixture.
  5. Layer cheesecake mixture, strawberry sauce, and remaining filling.
  6. Freeze for several hours until firm, slice, and serve.

Notes

Freeze overnight for best texture and clean slices.
