Ingredients
  

Pretzel Crumble
  • 2 cups crushed pretzels
  • 0.75 cup unsalted butter melted
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
Strawberry Layer
  • 2 cups strawberries diced
  • 0.33 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C) and grease skillet.
  2. Mix crushed pretzels, butter, and sugars to form crumble.
  3. Press two-thirds into skillet as crust.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs, vanilla, and sour cream, mix until creamy.
  6. Pour cheesecake mixture over crust.
  7. Cook strawberries with sugar and lemon juice until soft.
  8. Add cornstarch slurry and thicken.
  9. Spread strawberry layer over cheesecake.
  10. Top with remaining crumble and bake 35–40 minutes.
  11. Cool and chill before slicing.

Notes

Chill well before cutting for clean layers and best texture.
