- Preheat oven to 350°F (175°C) and grease skillet.
- Mix crushed pretzels, butter, and sugars to form crumble.
- Press two-thirds into skillet as crust.
- Beat cream cheese and sugar until smooth.
- Add eggs, vanilla, and sour cream, mix until creamy.
- Pour cheesecake mixture over crust.
- Cook strawberries with sugar and lemon juice until soft.
- Add cornstarch slurry and thicken.
- Spread strawberry layer over cheesecake.
- Top with remaining crumble and bake 35–40 minutes.
- Cool and chill before slicing.
