- Mix diced strawberries with lemon juice and cornstarch and set aside.
- Beat cream cheese, sugar, and vanilla extract until smooth.
- Lay an eggroll wrapper on a flat surface in a diamond shape.
- Add cheesecake filling and strawberry mixture to the center.
- Fold bottom corner over filling, fold sides inward, and roll tightly.
- Seal the edge with a little water.
- Heat oil to 350°F (175°C).
- Fry eggrolls for 2–3 minutes until golden brown.
- Drain on paper towels.
- Serve warm with powdered sugar or chocolate drizzle.
Notes
You can air fry or bake these eggrolls for a lighter option. Serve with whipped cream or strawberry sauce.
