Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
Strawberry Filling
  • 1 cup fresh strawberries diced
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
Assembly
  • 8 eggroll wrappers
  • 2 cups oil for frying

Method
 

  1. Mix diced strawberries with lemon juice and cornstarch and set aside.
  2. Beat cream cheese, sugar, and vanilla extract until smooth.
  3. Lay an eggroll wrapper on a flat surface in a diamond shape.
  4. Add cheesecake filling and strawberry mixture to the center.
  5. Fold bottom corner over filling, fold sides inward, and roll tightly.
  6. Seal the edge with a little water.
  7. Heat oil to 350°F (175°C).
  8. Fry eggrolls for 2–3 minutes until golden brown.
  9. Drain on paper towels.
  10. Serve warm with powdered sugar or chocolate drizzle.

Notes

You can air fry or bake these eggrolls for a lighter option. Serve with whipped cream or strawberry sauce.
