Method
- Mix cream cheese, sugar, vanilla extract, and lemon juice until smooth.
- Fold in chopped strawberries.
- Place filling in center of eggroll wrapper.
- Fold and roll tightly, sealing edges with water.
- Heat oil to 350°F (175°C).
- Fry eggrolls until golden brown, about 2–3 minutes.
- Drain on paper towels and dust with powdered sugar.
- Serve warm with optional sauce.
Notes
For a lighter version, bake or air fry instead of deep frying. Best served fresh and warm.
