- Beat the softened cream cheese until smooth and creamy.
- Mix in powdered sugar and vanilla extract.
- Fold in finely chopped fresh strawberries.
- Spread the cheesecake mixture evenly onto 4 slices of bread.
- Place the remaining slices on top to form sandwiches.
- Whisk together eggs, milk, heavy cream, sugar, vanilla, cinnamon, and salt in a shallow bowl.
- Dip each stuffed sandwich into the custard mixture for 10–15 seconds per side.
- Heat butter in a skillet over medium heat.
- Cook each sandwich for 3–4 minutes per side until golden brown and heated through.
- Let sandwiches rest 1–2 minutes, then dust with powdered sugar and serve with fresh strawberries and maple syrup.
Notes
Use slightly stale brioche for best texture. Cook on medium heat to avoid burning. Optionally drizzle with white chocolate for extra indulgence.
