Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 egg large
  • 1.25 cups milk
  • 2 tbsp butter melted
Strawberry Cream Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping
  • 0.75 cup fresh strawberries finely chopped
Cinnamon Sugar Coating
  • 0.5 cup granulated sugar
  • 1 tbsp cinnamon
  • 3 tbsp butter melted

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in whipped topping and chopped strawberries then chill filling.
  3. Whisk together dry pancake ingredients in a large bowl.
  4. Combine egg, milk, melted butter, and vanilla in another bowl.
  5. Mix wet and dry ingredients until smooth batter forms.
  6. Cook thin pancakes in a lightly buttered skillet.
  7. Spread filling onto pancakes and roll tightly.
  8. Brush rolls with melted butter.
  9. Roll pancake logs in cinnamon sugar mixture.
  10. Serve warm with strawberry sauce and whipped cream.

Notes

Serve immediately for best texture. Add Nutella or chocolate drizzle for extra indulgence.
