Ingredients
  

Pancake Shells
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1.25 cups milk
  • 1 egg large
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
Strawberry Cream Filling
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries finely diced
  • 0.25 cup mini chocolate chips optional

Method
 

  1. Whisk together dry pancake ingredients.
  2. Combine milk, egg, butter, and vanilla.
  3. Mix wet and dry ingredients until smooth.
  4. Cook thin mini pancakes on a skillet.
  5. Roll warm pancakes around molds and cool completely.
  6. Beat cream cheese and fold in whipped cream, sugar, strawberries, and vanilla.
  7. Pipe filling into pancake shells.
  8. Dust with powdered sugar before serving.
