Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup sugar
  • 0.5 cup butter melted
  • 2 eggs
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 0.5 cup milk
  • 1.5 cups strawberries diced
Filling
  • 8 oz cream cheese softened
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 375°F (190°C) and line muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in another bowl.
  4. Combine wet and dry ingredients and fold in strawberries.
  5. Prepare cream cheese filling.
  6. Fill muffin cups halfway, add filling, and top with batter.
  7. Bake for 18–22 minutes.
  8. Cool and glaze before serving.

Notes

Use fresh strawberries for best flavor and avoid overmixing batter.
