- Preheat oven to 350°F (175°C) and line baking sheets.
- Whisk flour, baking powder, baking soda, and salt.
- Cream butter and sugar until fluffy.
- Add egg, lemon zest, lemon juice, and vanilla.
- Mix in dry ingredients and fold in strawberries.
- Scoop dough onto baking sheets.
- Bake 10–12 minutes until lightly golden.
- Cool and drizzle with lemon glaze.
Notes
Pat strawberries dry before adding to dough to prevent excess moisture. Chill dough for thicker cookies.
