Ingredients
  

Cream Puff Pastry
  • 1 cup water
  • 0.5 cup unsalted butter
  • 1 tbsp granulated sugar
  • 0.25 tsp salt
  • 1 cup all-purpose flour
  • 4 eggs large
Vanilla Bean Cream
  • 2 cups heavy whipping cream
  • 0.5 cup powdered sugar
  • 1 vanilla bean or vanilla bean paste
  • 4 oz cream cheese softened
Strawberry Filling
  • 3 cups fresh strawberries sliced
  • 0.25 cup granulated sugar
  • 1 tsp lemon juice

Equipment

Method
 

  1. Combine strawberries, sugar, and lemon juice then refrigerate.
  2. Boil water, butter, sugar, and salt in saucepan.
  3. Add flour and stir until dough forms.
  4. Cool slightly and beat in eggs one at a time.
  5. Pipe dough onto baking sheets and bake until golden.
  6. Beat cream cheese, powdered sugar, and vanilla bean until smooth.
  7. Whip in heavy cream until fluffy peaks form.
  8. Slice cream puffs and fill with vanilla bean cream and strawberries.
  9. Stack filled cream puffs vertically and dust with powdered sugar.

Notes

Assemble shortly before serving to keep cream puffs crisp. Fresh vanilla bean creates the best flavor.
