Ingredients
  

Chicken Salad
  • 2 cups chicken breast cooked and diced or shredded
  • 2 cups corn kernels grilled or roasted
  • 2 cucumbers diced
  • 0.5 cup red onion finely chopped
  • 0.5 cup cotija cheese crumbled
  • 0.25 cup cilantro chopped
  • 1 avocado diced
  • 1 jalapeño finely diced
Creamy Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Char or grill the corn kernels in a skillet until lightly blackened.
  2. Combine chicken, cucumbers, grilled corn, red onion, avocado, jalapeño, cilantro, and cotija cheese in a large bowl.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  4. Pour dressing over salad ingredients and toss gently until evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Chill for 15-20 minutes before serving.
  7. Garnish with extra cotija cheese, cilantro, and lime wedges before serving.

Notes

For extra smoky flavor, grill the corn outdoors or add a dash of chipotle powder.
