Method
- Char or grill the corn kernels in a skillet until lightly blackened.
- Combine chicken, cucumbers, grilled corn, red onion, avocado, jalapeño, cilantro, and cotija cheese in a large bowl.
- Whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper.
- Pour dressing over salad ingredients and toss gently until evenly coated.
- Taste and adjust seasoning if needed.
- Chill for 15-20 minutes before serving.
- Garnish with extra cotija cheese, cilantro, and lime wedges before serving.
Notes
For extra smoky flavor, grill the corn outdoors or add a dash of chipotle powder.
