Ingredients
  

Chicken & Skewers
  • 1.5 lbs boneless chicken breast cut into 1-inch cubes
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 red bell pepper cut into 1-inch pieces
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • to taste salt and pepper
  • 2 tbsp fresh cilantro chopped for garnish
  • as needed wooden skewers soaked 30 minutes

Method
 

  1. Combine chicken, olive oil, garlic, soy sauce, smoked paprika, salt, and pepper. Marinate 30 min–2 hr.
  2. Thread chicken, pineapple, and bell pepper onto skewers.
  3. Preheat grill or oven to 400°F (200°C).
  4. Cook skewers 12–15 min, turning halfway, until chicken is cooked and edges charred.
  5. Brush sweet chili sauce during last 3–4 min of cooking.
  6. Garnish with cilantro and serve hot.

Notes

Marinate longer for deeper flavor. Use metal skewers for grilling longevity.
