Method
- Combine chicken, olive oil, garlic, soy sauce, smoked paprika, salt, and pepper. Marinate 30 min–2 hr.
- Thread chicken, pineapple, and bell pepper onto skewers.
- Preheat grill or oven to 400°F (200°C).
- Cook skewers 12–15 min, turning halfway, until chicken is cooked and edges charred.
- Brush sweet chili sauce during last 3–4 min of cooking.
- Garnish with cilantro and serve hot.
Notes
Marinate longer for deeper flavor. Use metal skewers for grilling longevity.
