Ingredients
  

Gnocchi Dough
  • 2 cups mashed sweet potatoes roasted
  • 1 egg large
  • 1.5 cups all-purpose flour plus more as needed
  • 0.75 tsp salt
  • 0.25 tsp nutmeg
Brown Butter Sauce
  • 6 tbsp unsalted butter
  • 10 leaves fresh sage
  • 2 tbsp maple syrup pure
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Roast sweet potatoes until tender, then mash until smooth.
  2. Mix sweet potato, egg, salt, nutmeg, and flour into a soft dough.
  3. Roll dough into ropes and cut into bite-sized gnocchi.
  4. Boil gnocchi until they float, then remove.
  5. Brown butter in a skillet until nutty and golden.
  6. Add sage and cook until crisp.
  7. Stir in maple syrup and toss gnocchi in sauce.

Notes

Avoid overworking the dough to keep gnocchi light and tender.
