  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 cup black beans cooked
  • 1 cup sausage or chorizo cooked, crumbled
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional
  • salt and black pepper to taste
  • 4 eggs large
  • 0.25 cup milk or cream
  • 0.5 cup shredded cheddar cheese
  • cilantro or parsley chopped, for garnish
  • hot sauce or salsa optional

Method
 

  1. Heat the oil in a large skillet over medium heat. Sauté diced onion and bell pepper until softened, about 4–5 minutes.
  2. Add minced garlic, chili powder, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  3. Add crumbled sausage or chorizo and cook until browned, about 5 minutes.
  4. Stir in black beans, salt, and black pepper. Heat through for 2–3 minutes.
  5. Whisk eggs with milk or cream in a bowl until smooth.
  6. Reduce heat to low and pour eggs into skillet. Gently scramble with chili mixture until eggs are softly set, about 3–4 minutes.
  7. Sprinkle shredded cheddar cheese over eggs and allow to melt. Garnish with cilantro or parsley.
  8. Plate and serve immediately with optional hot sauce or salsa.

Notes

For a vegetarian version, omit the sausage and add extra beans or tofu.
