- Heat olive oil and butter, then sauté onion, carrot, and celery until soft.
- Add garlic and cook briefly.
- Brown beef and pork thoroughly.
- Add wine and simmer until reduced.
- Stir in tomato paste, tomatoes, broth, and seasonings.
- Simmer 1.5 to 2 hours, stirring occasionally.
- Add milk during final 30 minutes and continue simmering.
- Remove bay leaf and serve over pasta.
Notes
Simmer slowly for best flavor. Sauce thickens as it cools and tastes even better next day.
