Ingredients
  

Soup
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 lb ground beef
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes 28 oz
  • 4 cups broth chicken or beef
  • 8 oz lasagna noodles broken
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Knife

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and ground beef; cook until browned.
  3. Stir in tomato paste and seasoning.
  4. Add crushed tomatoes and broth; bring to a boil.
  5. Add broken lasagna noodles and simmer until tender.
  6. Adjust thickness with broth if needed.
  7. Serve topped with ricotta, mozzarella, and parmesan.

Notes

Stir occasionally to prevent noodles from sticking.
