These Pineapple Chicken Tacos

Ingredients
  

Chicken Filling
  • 2 pounds boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lime juice
Taco Assembly
  • 2 cups fresh pineapple chunks
  • 8 small flour tortillas
  • 1 cup shredded purple cabbage
  • 1 avocado sliced
  • 0.25 cup cilantro chopped
  • 1 jalapeño sliced
  • 0.5 cup red onion diced
Creamy Sauce
  • 0.5 cup sour cream
  • 1 tbsp hot sauce

Method
 

  1. Place chicken thighs in a bowl and season with olive oil, smoked paprika, chili powder, garlic powder, cumin, salt, pepper, and lime juice.
  2. Heat a skillet or grill pan over medium-high heat and cook chicken for 5-6 minutes per side until fully cooked.
  3. Remove chicken from pan, rest briefly, then slice into strips.
  4. Add pineapple chunks to the same skillet and cook until lightly caramelized.
  5. Warm tortillas in a dry skillet or over an open flame.
  6. Mix sour cream and hot sauce together in a small bowl.
  7. Assemble tacos with cabbage, chicken, pineapple, avocado, onion, and jalapeño.
  8. Drizzle with creamy sauce, garnish with cilantro, and serve with lime wedges.

Notes

For extra smoky flavor, grill the pineapple outdoors or add chipotle powder to the chicken seasoning. Serve immediately for best texture.
