Ingredients
  

Tilapia & Sauce
  • 4 tilapia fillets 4–6 oz each
  • 2 roasted red bell peppers large, jarred or homemade
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped, optional
  • 1 lemon juice of
  • 0.5 cup vegetable or chicken broth
  • 1 tsp honey optional

Method
 

  1. Blend roasted red peppers, garlic, olive oil, smoked paprika, salt, pepper, lemon juice, broth, and honey until smooth.
  2. Preheat oven to 375°F or heat oven-safe skillet over medium heat.
  3. Pat tilapia dry and season with salt and pepper. Sear in skillet with 1 tbsp olive oil for 2 min per side.
  4. Pour roasted pepper sauce over tilapia, ensuring fillets are coated.
  5. Bake in oven 10–12 minutes until tilapia is opaque and flakes easily.
  6. Garnish with fresh parsley and serve with rice or steamed vegetables.

Notes

Leftovers store in fridge up to 2 days. Reheat gently on stovetop.
