Ingredients
  

Meatballs
  • 500 g ground beef
  • 0.33 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic minced
  • 0.25 cup parmesan cheese grated
  • 1 tsp italian seasoning
Soup
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cups chicken broth
  • 1 cup crushed tomatoes
  • 1 cup heavy cream
  • 2 cups spinach fresh

Equipment

  • Mixing bowl
  • Wooden spoon

Method
 

  1. Mix meatball ingredients and form small balls.
  2. Brown meatballs in oil and set aside.
  3. Sauté onion and garlic in the same pot.
  4. Add broth and tomatoes, bring to simmer.
  5. Return meatballs and cook through.
  6. Stir in cream and spinach.
  7. Simmer gently and season to taste.
  8. Serve hot with garnish.

Notes

For best flavor, use fresh herbs and high-quality parmesan cheese. Add cream at the end for a smooth texture.
