Ingredients
  

Poutine
  • 4 cups fries
  • 1 cup cheese curds
  • 4 eggs large
  • 1 tbsp vinegar
  • 2 tbsp chives chopped
Hollandaise Sauce
  • 3 egg yolks
  • 0.5 cup butter melted
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp cayenne pepper

Equipment

  • Baking sheet or fryer
  • Saucepan
  • Mixing bowl
  • Slotted spoon

Method
 

  1. Cook fries until crispy.
  2. Whisk egg yolks and lemon juice over heat.
  3. Slowly add butter while whisking to form sauce.
  4. Season hollandaise and set aside.
  5. Poach eggs in simmering water with vinegar.
  6. Assemble fries, cheese, eggs, and sauce.
  7. Garnish and serve immediately.

Notes

Serve immediately for best texture. Hollandaise is best fresh.
