Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tbsp heavy cream
Brûlée Topping
  • 0.5 cup granulated sugar for caramelizing

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg, egg yolk, vanilla, and cream, mixing until smooth.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Scoop dough onto baking sheets and flatten slightly.
  7. Bake 10–12 minutes until edges are lightly golden. Cool completely.
  8. Sprinkle sugar on each cookie and caramelize using a kitchen torch until crisp.

Notes

Caramelize the sugar topping just before serving for the best crisp texture.
