Method
- Rinse rice under cold water until water runs clear. Drain.
- Melt butter in a medium saucepan over medium heat. Add garlic and cook 1–2 minutes until fragrant.
- Add rice and stir 2–3 minutes until lightly toasted.
- Pour in stock, season with salt and pepper. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes.
- Remove from heat, fluff rice with a fork, stir in parmesan and parsley. Adjust seasoning as needed.
- Serve warm as a side dish.
Notes
For extra creaminess, stir in heavy cream or mix in sautéed vegetables.
