Ingredients
  

Stew
  • 2 lbs beef chuck cut into chunks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 3 potatoes cubed
  • 3 cups beef broth
  • 1 cup dark beer optional
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • salt and pepper to taste
Dumplings
  • 1 cup flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup cheddar cheese shredded
  • 0.5 cup milk
  • 2 tbsp butter melted

Equipment

  • Large pot or Dutch oven
  • Mixing bowl
  • Wooden spoon
  • Knife

Method
 

  1. Brown beef in oil and set aside.
  2. Cook onion, carrots, and potatoes.
  3. Add broth, beer, and tomato paste.
  4. Simmer with beef and herbs 1.5–2 hours.
  5. Prepare dumpling dough.
  6. Drop dumplings into stew.
  7. Cook covered 15–20 minutes.
  8. Serve warm.

Notes

Do not uncover while dumplings cook to ensure they steam properly and stay fluffy.
