  • 4 pieces boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs panko recommended
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste salt and black pepper
  • 3 tbsp olive oil or melted butter for baking/pan-frying

Method
 

  1. Preheat oven to 400°F (200°C) or heat skillet with olive oil.
  2. Set up breading station with flour, beaten eggs, and breadcrumb-Parmesan mixture.
  3. Dredge chicken in flour, dip in eggs, then coat with breadcrumb mixture.
  4. Bake for 20–25 minutes or pan-fry 5–6 minutes per side until golden and cooked through.
  5. Garnish with parsley and lemon wedges; serve hot.

Notes

Use panko breadcrumbs for extra crispiness.
