Ingredients
  

Cachapa Batter
  • 3 cups sweet corn kernels fresh or thawed
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp cornmeal or flour
  • 1 tbsp butter melted
  • 0.25 cup milk
Filling
  • 1.5 cups mozzarella or queso de mano sliced

  • Nonstick skillet

Method
 

  1. Blend corn, sugar, salt, milk, butter, and cornmeal until thick.
  2. Heat greased skillet over medium heat.
  3. Cook batter portions until golden on both sides.
  4. Add cheese, fold, and cook until melted.

Notes

Best served hot. Use fresh corn for authentic flavor.
