Venezuelan Sweet Corn Cachapas

Ingredients
  

Cachapa Batter
  • 3 cups corn kernels fresh or thawed frozen
  • 0.5 cup cornmeal
  • 0.5 cup whole milk
  • 1 egg large
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 2 tbsp butter melted
Filling
  • 8 oz mozzarella or queso de mano sliced

Equipment

  • Blender
  • Mixing bowl
  • Nonstick skillet
  • Spatula

Method
 

  1. Blend corn, milk, egg, sugar, and salt until mostly smooth.
  2. Pour into bowl and mix in cornmeal and melted butter.
  3. Heat greased skillet over medium heat.
  4. Pour 1/2 cup batter and cook 3–4 minutes until golden.
  5. Flip and cook another 2–3 minutes.
  6. Add cheese to one side, fold pancake, and cook until melted.

Notes

Serve warm for best texture and flavor.
